I was really excited for this Make it by Monday Challenge. I wanted to make a treat that I haven’t made in about five years. It’s a healthy dessert choice and so yummy. I don’t even have a copy of the recipe anymore, but knew it would be easy to figure out again.
Strawberry Dream Pie
You’ll need
-Graham Cracker Crust (or make one from scratch. I do prefer from scratch, but wanted this to be quick and easy)
-Strawberries (can be fresh or frozen)
-Small package white chocolate instant pudding mix
-Strawberry yogurt
-Milk
-Tablespoon of sugar (if desired)
-Whipped Cream (if desired)
1. Wash, stem and slice strawberries. Stir in the sugar if you want to sweeten them a bit. Set aside.
2. In a bowl, combine pudding mix and half of the amount of milk the box calls for (for the small box—just use 1 cup of milk). Stir until pudding is dissolved and then stir in one cup of yogurt.
3. Stir in strawberries.
4. Spoon into graham cracker crust. For this time around, I made it pie like. In the past, I’ve also made my crust in a 9x13 pan, but used the same amount of filling. It makes a thinner strawberry treat.
5. If needing to serve it soon, set in the freezer. Otherwise, refrigerate until firm.
Top with some whipped cream (I used vanilla whipped cream in a can. Doesn’t beat homemade, but it’s great to just keep around) and enjoy!
